Ingredients

  • 2 tablespoons olive oil
  • 1 onion, finely chopped (optional)
  • 1 large, ripe tomatoes, diced
  • 1 green pepper, diced
  • 2 large eggs
  • 1 tablespoon of tomato paste (salca)
  • Salt and pepper to taste
  • 1 teaspoon red pepper flakes (optional for spice)
  • 1 teaspoon paprika
  • Chopped parsley or fresh herbs for garnish
